Method:
- Put the ground almonds and caster sugar into a food processor and pulse for a few seconds.
- Add the almond extract, eggs and 1 tablespoon of milk and process again, adding the remaining milk slowly to form a soft dough if necessary.
Remove from the mixer and roll mixture into long sausage shapes; cut 5cm/2½in-lengths and shape into crescents with your fingers.
- Spread out the shaped cookies onto a baking tray lined with baking parchment and bake in a pre-heated oven gas mark 4/180ºC/160ºC fan/350ºF for 20-25 mins. Take care not to let them brown.
- Remove from the oven and cool on a wire rack. Dust liberally with icing sugar and serve with amaretto.
