Method:
- Sieve together the flour, cinnamon, bicarbonate of soda and salt. Cream together the butter and sugar.
- Lightly whisk the egg, add the vanilla extract and spoon on to the creamed butter-sugar mix, followed by the flour, rolled oats and chopped figs, mixing well until all is incorporated evenly.
- Roll tablespoons of the mixture into balls and place 4cm apart on baking trays.
- Bake in a pre-heated oven gas mark 4/180ºC/160ºC fan/350ºF for 8-12 mins, taking care not to burn.
- Leave to stand for 2 mins then lift on to a wire rack and allow to cool.
