Oat and fig cookies

Oat and Fig Cookies
Ingredients:

185g/6½oz self-raising flour
½ teaspoon ground cinnamon
½ teaspoon bicarbonate of soda
pinch of salt
120g/4½oz unsalted butter, softened
225g/8oz brown sugar
1 egg
½ teaspoon vanilla extract
80g/5½oz rolled oats
63g/2½oz finely chopped dried figs
Method:

  1. Sieve together the flour, cinnamon, bicarbonate of soda and salt. Cream together the butter and sugar.
  2. Lightly whisk the egg, add the vanilla extract and spoon on to the creamed butter-sugar mix, followed by the flour, rolled oats and chopped figs, mixing well until all is incorporated evenly.
  3. Roll tablespoons of the mixture into balls and place 4cm apart on baking trays.
  4. Bake in a pre-heated oven gas mark 4/180ºC/160ºC fan/350ºF for 8-12 mins, taking care not to burn.
  5. Leave to stand for 2 mins then lift on to a  wire rack and allow to cool.
